I wanted to quickly share this salad recipe, which I've been making just about every ten days and which stars some super au courant ingredients: mayo and imitation crab! I also wanted to say a couple of things regarding the video.
1. They say it's important to let your kids fail! (This will make more sense once you've watched said video.)
2. Teddy's really good to his stuffed animals, as far as feeding them three squares a day. (See screenshot below for proof.)
serves 2-3 as main course
½ head of Napa or Savoy cabbage, thinly sliced (or about 3 cups)
2 small heads of Romaine, thinly sliced (or about 3 cups)
¼ cup cilantro, washed, dried, and chopped
2-3 Persian cucumbers, seeded and sliced into half-moons
¾ cup (or a bit more) slivered almonds, toasted
1 package (8 oz) imitation crab, cut in half horizontally and shredded
1 medium avocado, pitted and diced
for the dressing:
¼ cup mayonnaise
scant ¼ cup rice vinegar
1 tablespoon sesame oil
1-2 tablespoons shoyu
Place the first seven ingredients in a large bowl.
In a separate bowl, mix the mayo, vinegar, sesame oil, and tablespoon of shoyu until well combined. Taste it. If you think it could stand to be a bit saltier, add a little more shoyu. If you’d like it to be creamier, add a bit more mayo and/or sesame oil.
Pour the dressing over the salad and mix thoroughly to combine. Enjoy.

Dying over here. This was so cute and funny, I watched it once and then made my Matt watch it with me. Salad looks great too.
Teddy's personality really shines in this one! I love that you just picked up the lettuce from the floor and kept on rolling. That's exactly what I would have done!

I WILL have fun with this salad. This looks so good. Toasted nuts/seeds take salad to new levels.
I do try to have "fun" with my salads by throwing in all kinds of random stuff. Different textures and colors make it less boring to have salad as your main dish or to eat them on the regular. Maybe some shredded seaweed sheets or furikake would be nice in the dressing? Somehow I knew that lettuce would go flying (I've done it too, Teddy!)
